Meet Our Executive Chef

Chef Jose Bermudez

Originally born in Maracaibo, Venezuela, a Caribbean city known for its beautiful coastlines and vibrant cuisine, Chef Jose discovered his passion for cooking. He emigrated to Miami, where he studied at Le Cordon Bleu College of Culinary Arts and began his career in banquet hospitality. Upon moving to Las Vegas, Chef Jose had the opportunity to work for renowned hotels, organizing events of great magnitude. After a successful career, he decided to open his own catering company to express his lineage and traditions through food.

Chef Paolo Yballe
Chef Paolo Yballe, originally from Manila, Philippines, honed his culinary skills before relocating to the United States in the early 2000s to kickstart his career in California. Subsequently, he made his mark in Las Vegas, serving as the Executive Chef at the Wynn Resort and, most recently, at the Bellagio Resort. Chef Paolo not only leads the creation of our Filipino and Asian cuisine menus but also provides consultancy services for new project development as one of our associated chefs.
